Dehydrated lemon peel

Process

Is a product obtained by cold extraction of the external part of the fruit (aledo + flavedo) of the different varieties of lemon (lemon citrus). Its processing involves successive washings with water and a drying in rotary ovens that allows a final humidity between 10 and 12 %.
